Sourdough Pitas

Sourdough Pitas are the king of bread!  They're a bit tricky to make but sourdough pitas are worth the effort to make.

Sourdough Pitas

2 cups sourdough starter
4 cups unbleached all-purpose flour
1 teaspoon of salt
1 cup of water
1 tbsp of sugar

Feed your starter and allow it to get quite active.  If you want a very sour pita then feed it again or even a couple more times.

Watch your starter, when it reaches the peak of activity that's when you want to start making the pitas.  First pre-heat your oven to 450F and place a pizza stone in the oven.

Combine the ingredients and knead the dough until you have a nice satiny ball.  Divide the dough into balls about 1-1/2 to 2 inches in diameter and flatten them out.  Flour your rolling pin and then using your hands flatten the first round out as much as possible by hand striving to keep the shape as round as possible.  Finish using the rolling pin until your dough is about 10" in diameter or about 3/16" thick.   Place the dough on the pizza stone in the oven and watch for about 3 minutes.  The pita should puff up nicely.  Repeat for the rest of the rounds.
