Bear Chops with Ground Cherry and Tomato Salsa

2 Bear chops
Milk
1/3 cup of freshly diced Pineapple Ground Cherries
1/3 cup of freshly diced tomato
1/4 tsp of minced garlic
1/4 cup of olive oil
Juice of 1-2 lemons
1 fresh chili pepper (optional)


Soak the bear chops in milk overnight. This will ameliorate the potentially strong or gamey flavor of the meat.

Fire up the BBQ, I strongly recommend using a smoker if you've got it.  I use a Lil' Tex Elite Traeger Pellet BBQ and an A-Maze N pellet Smoker with mesquite pellets.  While the chops are smoking prepare the salsa by combining the ground cherries, tomato garlic, olive oil lemon and chili pepper.  Ensure that the bear chops reach a temperature high enough to kill off trichinosis and any other potential parasites.

Serve with a side of garlic mashed potatoes and top the chops with the salsa.
