French Onion Beef Soup

This isn't the best French Onion Soup ever but it is a quick and easy recipe.  Using a slow cooker will make the recipe even easier.
French Onion Beef Soup

Ingredients:

1lb of stew beef
2 cans of onion soup
ghee (clarified butter)
grated mozzarella cheese
croutons
splash of Mediera (optional)

Equipment:

Frying pan
Dutch oven
Ramekins
Spatula
Ladle

Fry the stew beef in ghee.  Place in the dutch oven, add the two cans of onion soup.  Simmer over low heat for a couple of hours (or use slow cooker).  About 10-15 minutes before serving, place portions in ramekins, top with croutons and then mozzarella cheese.  Place under the broiler until cheese melts, I like mine well browned.

Mrs. Bugbear made this last night and made some tasty sourdough croutons which really kicked it up a notch to borrow a quote.  I highly recommend adding the Medeira although your favorite wine will work almost as well.
