Lime Margarita Jelly

I was waxing nostalgic for lime margaritas when I decided to go ahead and make some lime margarita jelly.  Don't be eating this stuff for breakfast though, you might not pass a sobriety test.  My one complaint is that the jelly is a bit cloudy but the taste will remind you of sipping margaritas on the patio at your local watering hole!

Lime Margarita Jelly

Ingredients

1-1/2 cups of water
3/4 cup fresh squeezed line juice
4-1/2 cups granulated sugar
1/2 tsp butter
1/2 cup tequila
1/4 cup Gran Marnier
2 tbsp of lime zest
1 pouch Certo Liquid Pectin

Dishes and Utensils

Magnetic Lid Wand
Jar Tongs
Ladle
Pots
Sealing Jars (Lids, Jars & Rings)
Cooling Rack

  1. Boil jars for 10 minutes. Place the sealer lids in hot water just before proceding to step 2.
  2. Combine the Gran Marnier and Tequila.  Cover and set aside
  3. Combine the lime juice, water, sugar and bring to a rolling boil
  4. Add the pectin and boil for one minute, ensure that your jelly hist 220F.
  5. Remove from heat and skim off foam.
  6. Add the Gran Marnier and Tequila.
  7. Place a bit of lime zest in each jar as you pour the jelly into the jar.  Leave 1/4" of head-space in each jar.
  8. Process the jars for ten miuntes in hot water bath.
  9. After the jars have cooled, check the seal and remove the rings.  Wash each jar, reinstate the rings and store in a cool place.
