Potato Pancakes with Beef Gravy

In the continuing theme of leftovers, Mrs. Bugbear and I had Potato Pancakes with beef gravy Sunday morning after a roast beef dinner Saturday night.

Potato Pancakes

2 cups of Mashed Potatoes
1/2 cup of all-purpose flour
2 tsp of Baking Powder
1tsp of Gluten Flour (aka Vital Wheat Gluten)
1/2 tsp salt
2 eggs
1/2 Vidalia Onion Diced
6 green onions/scallions
enough milk to create a stiff batter

Dice the green onions and set aside.  Combine the mashed potatoes, flour, baking soda, eggs, onions and gluten and mix thoroughly.  Add milk until the mixture forms a fairly stiff batter.  Pour a third of a cup of batter into a non-stick frying pan on medium heat and cook until golden brown (about three minutes a side).  Serve with diced green onions as a garnish and beef gravy on top.

Mrs. Bugbear also ate her pancakes with just butter and one with green onions and sour cream.  All in all it's a great way to use up leftover mashed potatoes and gravy.  One note, depending on how you make your mashed potatoes you may need little or no milk or alternately you may need to add a small amount of oil.
