Mulled Apple Cider Pork Roast

Mrs McBugbear and I fortuitously don't have to spend weeks eating leftover turkey.  Christmas generally means that we are going to either her parents/extended family or mine for Christmas dinners.  The leftovers are generally left at our respective parents places.  Usually the only leftover food we have is a bit of mulled apple cider from Christmas Eve.  This year I decided to put the leftover cider to good use:

Mulled Apple Cider Pork Roast

Mulled Apple Cider
Pork Roast
2 tbsp Paprika
1 tsp onion powder
1 tsp garlic powder
1 tsp mustard powder
1 tsp sugar
2 medium sized Vidalia Onions

Prepare a dry rub using the spices, rub the roast and allow to rest in the fridge for about an hour.  Remove the roast from the fridge and place in a slow cooker, pour enough cider into the slow cooker to cover the bottom inch of the roast (25mm).  Slice the onions into three and place on top of the roast.  Cook on low until the internal temperature of the roast reaches a safe level.
