Sourdough Pitas
2-1/2 cups of white all-purpose flour
1 teaspoon of sugar
1 cup of sourdough starter
1 tbsp of olive oil
1 teaspoon of salt
First feed the starter as per your normal practice. Keep an eye on the starter until it's reach the peak of activity. Now it's time to start. Place a pizza stone in the oven and pre-heat the oven to 500F. Combine the ingredients above and knead until the dough is soft and elastic. Allow the dough to almost double in volume and then punch down and divide the dough in to about 2-3" rounds. Roll the first round out until it's about 1/4" thick and slide onto the pizza stone. Prepare the next round and watch the round in the oven removing it from the oven once it's finished puffing and place it on a wire rack to cool. Repeat until all the pitas are done.
Donair Sauce
1 can condensed milk
2/3 cup sugar
1/2 tsp garlicpowder
1/4 cup vinegar
Combine the milk and sugar and stir until the sugar dissolves, add the garlic powder and mix. Add the vinegar and mix briefly. Place in the Fridge aand let stand for at least an hour.
Donair Meat
2 pounds ground beef
1/2 cup bread crumbs
2 tsp pepper
1 tsp cayenne pepper
3 tsp of paprika
3 tsp onion powder
1 tsp garlic
1/2 tsp salt
Combine all the ingredients. Form a loaf and press all the air out of the loaf. Bake 2 hours at 325F (check the internal temperature with a meat thermometer. Allow the loaf to cool. Slice the meat thinly and fry in a frying pan before serving. Serve on or in a sourdough pita with chopped onions, tomatoes and donair sauce.
If you get you hamburger at the butcher then have him grind it as finely as possible. I've also found that you can cook it on the BBQ rotisserie but you have to cook it in the oven first until the loaf is firm enough that it won't fragment when you skewer it.
