Chick Pea & Smoked Pepper Salad

Mrs Bugbear made a lovely salad last night.  I had smoked some vegetables and pork chops Sunday night  so my dear wife used some of the peppers in the salad and the result was very pleasing.

Chick Pea & Smoked Pepper Salad

Ingredients

2 Yellow, Orange or Red peppers
1-19oz can of chick peas
1-1/2 cups chopped Parsley
1/4 cup of diced or crumbled feta
olive oil
lemon juice
salt & pepper
mesquite wood chips

Cut the peppers into large chunks.  Smoke the peppers at as low a heat as possible, I generally use my BBQ for this rather than my smoker since I can maintain a lower smoking heat in the BBQ.  Cool the peppers and then dice into smaller pieces, add the chick peas, chopped parsley and feta.  Combine the olive oil, lemon juice, pepper and salt to taste and pour over the salad just before serving.

Kalamata olives make a nice addition to this salad as well.
