McBugbear's Quick Pork Bhuna

I was feeling a bit lazy on the weekend and I decided I'd cook and Indian meal.  We do keep a couple of jars of Patak's curry pastes around the house for quick Indian meals but generally we make them from scratch.   This weekend I got a little bit creative while I was rushing to put supper together.

McBugbear's Quick Pork Bhuna

2 pork tenderloins cut into medallions
2 broccoli crowns
1 large red onion diced
1 can diced tomatoes
double handful of white mushrooms sliced
2 tbsp of tamarind concentrate
2 red peppers cut into strips
1-2 tbsp of ghee
4-6 tbsp of Patak's Bhuna paste


Melt the ghee over high heat in a large non-stick wok and add the diced red onion.  Stir the onions constantly until the steam coming of the onions diminishes to almost nothing, reduce heat to the low side of medium and continue stirring until the wok cools down.  Place the pork medallions in a layer over the onions and flip frequently until cooked and the onions have caramelized.  Add the Bhuna paste and cook until fragrant.  Add the mushrooms and cook down. Add the tomatoes and broccoli and simmer over low heat until the broccoli is tender-crisp, add the strips of red pepper and add tamarind concentrate to taste.  Serve as soon as the red peppers are cooked through.
